Chicken Mango Salad- guest post!

Its Sunday funday, I’m still camping and I’m SUPER excited to share another guest poster today. This time Jo from Runs with Dogs (a girl after my own heart!) is sharing such an amazingly simple recipe that I for one can NOT wait to try in the (hopefully) very near future!

Hi my name is Jo from over at Runs with Dogs. I’m honoured to be guest blogging today for Cinnamon!

I thought I’d bring a little something to the party for my post. I love finding healthy food that tastes good. Even better if it is super easy to make. So I am bringing along my favourite after-workout, take-to-a-potluck/picnic/dinner, quick-way-to-use-up-a-few-spare-ingredients-in-your-fridge recipe for everyone!

I can’t really take credit for making this one up, a friend of mine that also a nutritionist verbally told me the recipe eons ago. She has now has a little café (http://www.cafenatura.ca/) in my hometown which I’m sure serves a version of this since its so tasty. I have been using as my own for family gatherings. I know, shame on me! Try it out yourself and you’ll see why its something you will want to share! I’m always taking home an empty bowl and being asked for the recipe. It is so dead simple to make.

Without further ado, here’s my tasty contribution!

Chicken Mango Salad

1 large seasoned cooked chicken breast, cubed (any seasoning is good, even if its salt and pepper)
1 large mango, peeled and chopped into 1/2 bite size pieces
1 cup seedless grapes cut in half (red or green, your choice – use both if you like!)
1/2 cup chopped walnuts or pecans

2 tablespoons mayonnaise

Add all ingredients to a bowl and mix well. If your mango is tart, try adding a teaspoon of warmed honey so it mixes in easily.

Refrigerate until ready to serve.

Thanks Jo! How yummy does that salad look? I mean really?! I don’t typically buy mangos but I am pretty sure one will be purchased and in my kitchen in the next week or so. Unless I get a Groupon Goods email for some and then of course I will be buying them off the internet. ;-)

Thanks for the introduction to a new blog and a great recipe! I love chicken salad (especially in the summer) and this is a great twist! Hope camping went well :)
